- Take a Pan.
- Add 2 tbsp Ghee.
- Add grated Carrot (1 kg).
- Saute for 2 minute on high flame.
- Cover the lid and saute for 10 minutes on low flame.
- Stir occasionally.
- After 10 minutes, add 1/2 ltr full cream milk (with malai).
- Mix well.
- Boil (without lid) for 20 minutes on high flame and stir occasionally.
- Milk will almost reduce by this time.
- Add 1/2 cup Sugar.
- Stir continuously on high flame for 5 minutes.
- Sugar will get dissolved and the mix will be almost dry.
- Add chopped Cashew, Almond & Pistachio (7-8 peace each).
- Add 1 tbsp Cardamom powder.
- Add Ghee 2 tbsp.
- Stir continuously till Ghee separates out (3-4 minutes).
Carrot Halwa is ready.
